Sources may vary, but include Maryland, Venezuela, never any Chinese crab meat. Lump crab meat provides an affordable option for crabcakes, stuffing or soups. This is FRESH crab meat and will have some shell content. We use only the best, but only pasteurized crab meat doesn't have shell. Problem is that the flavor is compromised. One pound of fresh crab meat can make approximately 3-4 crab cakes DEPENDING on the recipe you use.
